    This Friday, the annual 4th of July celebration in Niwot will kick off at 7:30 a.m. with both the beginning of Bert's Pancake Breakfast and the Niwot Downhill Mile race.     This Independence Day, Niwot will not only celebrate the country’s founding, but also its own by honoring the descendants of some of its original Niwot area homesteading families as Grand Marshals in the 4th of July Parade, sponsored by the Niwot Community Association, with funding provided by the Niwot Local Improvement District.     "Why would anybody ever eat anything besides breakfast food?" This excellent question was posed by the fictitious character, Leslie Knope, played by Amy Poehler, from the television show "Parks and Recreation." Quite frankly, it appears a large majority of Niwot agrees. The only thing that makes breakfast foods better is when that food is shared with friends, neighbors, loved ones, and new faces.
