All Local, All The Time
My friend Sue’s mother made tons of Christmas cookies and put them in large tins on her enclosed back porch which was unheated in Chicago. It made a nice refrigerator for her weeks, if not month, long Christmas baking. I loved to go there and sample all the cookies. Butter Chews were my favorite. -J. Clark
Butter Chews
Ingredients
¾ cup soft butter
3 T. sugar
1½ cups sifted flour
3 eggs, separated
2¼ cups brown sugar, packed
1 cup chopped pecans
¾ cup coconut
confectionary sugar
Directions
Cream butter and sugar. Blend in flour.
Put in the bottom of a 13x9x2” pan.
Put flour on your hands.
Even crust all over pan with your hands.
Bake at 350 degrees for 15 minutes.
Take out of oven
Beat egg whites till stiff but not dry. Put aside.
Beat egg yolks. Add brown sugar.
Stir in nuts and coconut.
Fold into the egg whites. Spread over crust.
Return to the oven for 25-30 minutes longer until solid on top.
Cool. Dust with confectionary sugar. Cut and enjoy!
