Building On Good Food

"We are building on CJ’s good food," said Steve Gaibler, the new owner of CJ’s Cottonwood Café. "You don’t fix it when it isn’t broke."

Gaibler purchased the Cottonwood Café on July 18 with his brother Ryan Gaibler. Steve said the brothers’ plan is "to make it a homier place, good portions, fast service and good value." The new decorations are part of that plan. "I made all of the shelving and the fences from weathered lumber," Steve said proudly pointing to one of the booth wall decorations. "I thought it would be hard but it was great fun to do it."

A name change is also planned by the Gaiblers. "The Garden Gate Café will become official as soon as the new sign arrives," Steve said. 

There are changes in the kitchen too. The Gaiblers have hired a sous chef, 
Francirco, "He is just wonderful," Steve opined, with just a touch of awe in his voice. "He makes home made soups and with him we will expand the menu (to include) eggs Benedict and new signature items, specialty omelets and burgers."

Going into the restaurant business was a given in the Gaibler family. "Dad owns Vellero’s, an Italian restaurant in Longmont." Steve said. Ryan and Steve have worked as food consultants and suppliers since 1984 for Nobel Cisco, a local food service company.

Breakfast and Lunch are served all day. While not open for dinner, catering for evening parties is available.

The Garden Gate Café is located in Cottonwood Square in Niwot. It is open seven days a week from 7 a.m. to 2 p.m. The phone number is 303-652-8595.
